Maple syrup and baked apple lead, and it finishes with a rich, nutty praline.\u003c\/strong\u003e\u003c\/em\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eFazenda California is a farm that has been running for over a century in Jacarezinho, in the Norte Pioneiro region of Paraná. Luiz Saldanha took over its management in 2004, when his godfather invited him to run the estate. Since then he has turned it into one of the most respected specialty farms in the state. It was the first property in Paraná to gain both UTZ and Rainforest Alliance certification, and it was recognised in the Brazil Cup of Excellence in 2010 and again in 2015. No other farm in Paraná has done that.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eLuiz is a Q-Grader and an instructor in coffee processing with vast wealth of coffee knowledge and experience. He has studied fermentation alongside some of the best-known names in the industry, and he helped secure Geographical Indication status for Norte Pioneiro in 2012. In 2015 he co-founded Capricornio Coffees, which works closely with hundreds of small and mid-sized farms across Paraná and São Paulo. We know Luiz personally from time spent visiting his farm, and this lot comes straight from that relationship. He puts it best: \"the coffee chain is made up of people and, as fascinating as understanding the nuances present in each cup, is understanding the nuances of those behind them.\"\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThis lot is Arara, a Brazilian variety known for its yellow cherries and natural sweetness. It is dried whole as a natural, which gives it a heavy body, low acidity and a deep, dessert-like sweetness.
