 DESCRIPTION  :

This naturally processed Pacas from Alex Ponce’s Finca Palo Verde in Marcala, La Paz is a sweet, vibrant Honduran coffee bursting with red fruit and candy-like notes, rounded out by a smooth Irish cream richness from slow cherry ripening at high altitude.

Situated in Cabañas in La Paz’s southern region of Honduras, Alex Ponce’s farm is a great example of the country’s remarkable coffee diversity. The higher altitudes and cooler night temperatures in La Paz slow the ripening of the coffee cherries, allowing them to develop greater sweetness and frequently stone-fruit–like flavours. Alex oversees all processing on the farm, carefully hand-harvesting the cherries and drying the coffee on raised beds under direct sunlight.

The Producer
Alex learned about coffee since his childhood because his father had a farm and he helped him a lot. When he turned 19 years old, he started working in a clothing factory in an industrial zone, where he worked for 9 years. In 2013 his uncle proposed to sell him a property in Cabañas, La Paz (where his family originates). After thinking about it, he decided to buy the property with all the savings from his work in the factory. The next year he quit the factory and started planting the coffee farm on the property. His dad currently lives on the farm with the family and he helps him manage the farm.

Natural process
The cherries are picked carefully when ripe and submerged in a tank of water to remove floating cherries. The cherries are then put on raised beds for around 18 days during the drying of the cherries, which are then sorted by hand to remove the defective cherries.
