Sabillón is a vibrant washed Parainema from Las Flores, Honduras, bursting with notes of mandarin, strawberry, and candyfloss for a delightfully sweet and juicy cup.
Edwin Ever Sabillón Paz is a dedicated smallholder producer from Las Flores, Santa Bárbara, in the Montecillos region of Honduras. Having worked with coffee since the age of ten, helping on his father’s farm, Edwin now manages his own 1.75 hectares farm, El Plan, where he cultivates this Parainema variety with a focus on quality and sustainability. After losing his first Catuai crop to leaf rust in 2011, he replanted with Parainema—encouraged by his neighbour’s success in the Cup of Excellence—and has since earned recognition for his consistently clean, sweet, and structured coffees. This washed Parainema lot reflects Edwin’s meticulous approach: hand-picked cherries undergo dry fermentation for 18 hours before being washed and solar-dried, resulting in a cup that’s vibrant with sweet citrus and rounded cacao notes.
Aware of the importance of conserving the natural resources of his farm, he carries out several conservation practices, including the protection of forests and water sources, and uses guamo trees and banana plants to provide regulated shade for the coffee plants. Through careful shade management, soil conservation, and responsible farming, Edwin continues to produce coffees that embody both resilience and refined craftsmanship.
